Amy's Campfire Sauce

There is a sauce.  The best sauce at Red Robin.  I wanted french fries, and the only dip that would do is the Campfire Sauce at Red Robin.  But going to Red Robin was out of the question.  And so what do I do when I want to eat something, and it seem unattainable?.... I do something similar with what I have.

Thus this recipe was born: Amy's Campfire Sauce (and it's vegan too!)

Ingredients

  • 2 Tbs. Veganaise (or real mayo could work- I haven't tried it)
  • 2 Tbs. Ketschup
  • 1/2 tsp. Liquid Hickory Smoke
    • (If you have Hickory BBQ Sauce you could probably just use 2 tbs. of BBQ rather than ketchup with liquid smoke)
  • 2-3 tsp. Chipotle Sauce (depends our your taste)
  • dash of season salt (That is Kevin's addition to the recipe)
Directions
  1. Mix all together.
  2. Eat. :)

Super simple and tastes good with fries and on burgers.  Enjoy!

Raw Collard Green Salad

I was craving a creamy kale salad... yet I forgot that in my refrigerator was collard greens -- not kale. So I made looked up collard salad and found this recipe at Eating Bird Food.  I modified it, and it is yummy!  Here is the recipe.

Ingredients
  • 1 bunch of collard greens
  • 1 carrot
  • 1/8 c. olive oil
  • 1/8 c. apple cider vinegar
  • 1/4 tsp. salt
  • 3 cloves of garlic

Directions

  1. Cut the collard greens into small pieces.
  2. Shred the carrot.
  3. Wisk/Mix together oil, vinegar, salt, and garlic.
  4. Combine and let sit for at least 3 hours.
  5. Eat. ;)  ( or if your like me I was eating it before I even let it set)

The salad dressing is tangy and the carrots added a nice sweetness to balance the dressing.

It's a keeper of a recipe.

In 1 cup of collard greens there is...

  • 36% of your daily value of Vitamin A
  • 21% of your daily value of Vitamin C
  • 8% of your daily value of Calcium
  • 5% of your daily value of Vitamin B-6
